What do we expect from our ideal restaurant?

Walking over the threshold of our restaurant, the first thing you notice is the atmosphere of serenity that all employees create for the customer. They are sincere and responsible, undoubtedly the result of good personal leadership, always used by John's careful guidance to plan, experiment and order in moments of calm but also to respond effectively, with speed and precision, at peak times. We give our full attention to children (the most demanding customers), and the atmosphere inside always family friendly.
The restaurant, open all year round, changes its appearance depending on the season: warm, meaty flavours on our plates in the Autumn and winter, light, summery dishes in the warmer months. Part of our strength lies in our location in the centre of the island. You can find us easily by just walking between the two main squares under the ancient Torre Pisana, symbol of Marina di Campo. Giovanni is able to exploit the fruits of nature in every season and in particular those brought forth by the sea so close to our kitchen. In addition to the choice available on our menu, we always ask: What is good today? Whatever's good is what will be served. Whether cherry tomatoes and olives; stuffed anchovies; dough with octopus; or scented herbs.
And what about our pizza dough? In addition to normal leavening, our pizza maker also uses the longest method of cold fermentation. The result of this process is felt immediately in the perfume and consistency in the mouth, and the other we can appreciate later: unparalleled digestibility. If you say goodbye to John in the afternoon, you will often find him in the kitchen, animated as always by his great and passionate spirit, developing some new dish, with one eye on the traditional.
Tradition and innovation, an inseparable combination that is reflected, in addition to the menu, also in our traditional wine and innovative oil menus. There are few restaurants that can boast such a rich olive oil menu, and if John understands your passion, you can taste them all, describing the features and discussing them together.
Passion in the kitchen is also felt through these choices, choices that go far beyond the economic calculation of management. For lovers of good food, good wine and magical olive oil, Cantuccio di Giovanni is the lighthouse of Marina di Campo and those who know it can already see it's light shining from Piombino when the ferry turns its bow toward Elba island.
